Spaghetti Carbonara
Ingredients:
spaghetti, parsley, single cream, salt, pepper, olive oil, 4 eggs, streaky bacon
Directions:
Boil plenty of salted water and add spaghetti.
leave to simmer. While pasta is simmering, fry streaky bacon in olive oil until crisp an cut into 1/2" pieces. Simmer the pasta until cooked how you like it and drain off hot water. Put cooked bacon and olive oil into the spaghetti, crack eggs into the saucepan on top of the pasta and stir well until the eggs cook with the stored heat of the pasta. Mix in seasoning and cream and sprinkle liberally with parsley.
Serve immediately.
Singapore Spicy Beef Soup
Ingredients:
500gms stewing steak, coriander, chicken stock, 1 chili sliced finely, peanut oil, turmeric, cumin, garam masala, 1 chopped potato, 1 teaspoon lemon juice
Directions:
Slice beef into small dime-sized pieces and fry in oil until slightly browned.
Turn heat down and add turmeric and cumin and mix with meat. Add chicken stock, chili,
chopped potato and simmer for 30 minutes. Add salt to taste, sprinkle with chopped coriander and serve.
Red Nose Cakes
Ingredients:
1 cup self raising flour, 1/2 cup sugar, 1 cup butter, 1/2 cup chopped dates, 1 teaspoon vanilla essence, 1 teaspoon cinnamon, 1 teaspoon baking powder, 1 egg, glace cherries, 1 cup icing sugar, 1 teaspoon instant coffee
Directions:
Switch oven to 200C. Mix flour, sugar, 1/2 the butter, vanilla, cinnamon, baking powder
and egg in a food mixer.
Mix chopped dates into cake mix and spoon into fairy cake paper cases.
Add to the oven for about 20 minutes.
While cooking, make the butter icing by mixing the rest of the butter with
the icing sugar and coffee.
When the cakes are cooked and perfectly cool, spread the tops with the butter icing
and top with a glace cherry.Enjoy!
Auntie Judy's Casserole Breakfast
We experienced this in Fort Worth where
Auntie Judy lives. This is BIG food to set you up for the day.
Ingredients:
3 Cups milk, 8 Well beaten eggs, 3/4 teaspoon dry mustard, 3/4 teaspoon salt, 8 slices buttered bread (cubed), 1 lb Cheddar cheese (grated)
Directions:
Grease casserole dish, alternate bread and cheese. pour eggs and milk over this.
Add extra ingredients such as :-
Browned sausage, ham, bacon, chopped onions, green peppers,
mushrooms, jalapenos, etc. (some or all)
Refrigerate overnight. Next morning, bake for 1 hour 350 degrees F
Italian Meatballs

There are many variations on this theme and you can substitute pork or chicken for the turkey and of course it's a brilliant way to use up turkey left-overs

Ingredients:
Meatballs -
minced turkey, 2 eggs,
parmesan, breadcrumbs,
pine nuts, oregano,
salt & pepper, parsley
Sauce -
1 tin chopped tomatoes,
4 cloves sliced garlic, 1/2 an onion (chopped), salt & pepper,
parsley, borlotti beans, oregano

Directions:
Fry the chopped onion and garlic until transparent and then liquidize with half the tomatoes. Add tomatoes to pan and bring to the boil,then add mushed onions, garlic, beans and oregano and simmer gently for 10 minutes. While sauce is simmering, fry meat, onions and nuts until light brown. Let meat mixture cool down bit, then mix meatball ingredients - with hands is best - into chestnut sized balls and fry until brown. Add meatballs to sauce, sprinkle with parsley and serve with linguine or pappardelle.

Bombe Alaska
This is possibly my favourite dessert but it must be eaten immediately it's cooked.
Ingredients:
1lb vanilla ice cream, 3-4 egg whites, 1 can of peach slices, 1 flan base, 1/2 cup caster sugar
Directions:
Heat oven to 240C. Make sure ice cream is well frozen beforehand and that the fruit is cooled in the fridge. Beat egg whites until stiff enough that peaks can be drawn. Fold in castor sugar. Quickly place flan base on a heat proof base and place ice cream on top.
Arrange peach slices all around ice cream and smother with egg whites to at least 2 inches thick. Place in the oven and bake for between 5-7 minutes or until egg whites are light brown.
Serve immediately.
